Vegan Avocado Ice Cream


This is super easy...But you must have an ice cream maker or some other knowledge of making ice cream.  This recipe is for an ice cream maker!

1/2 cup fresh lime juice (about 5-6 limes)
1 tablespoon Chia seeds (just ask at Trader Joes)
2-3 cups Almond Milk (or Soy or Coconut - whatever your preference) 
4 very ripe avocados
3 tablespoons raw honey (or whatever sweetener you want to use)

Put the tablespoon of Chia seeds into the 1/2 cup lime juice and let sit for 10 minutes. 

Then put all of the ingredients into a blender - lime juice / chia seed mixture, your peeled and seeded avocados, the almond milk, and honey.  Start with 2 cups milk and just keep adding as you go.  Same with the honey - just taste it.  Blend until you have a very smooth consistency.  It will be thicker but very smooth and creamy. 

Then pour into your ice cream maker following the instructions for your machine.  Mine machine took about 30 minutes, but I'm pretty sure I over filled it so it took longer than necessary.  You're looking for the consistency in the photo above.  Remove from the machine and enjoy immediate or put in the freezer for later :) 

*honestly I have no idea what the Chia seeds are for...I adapted this recipe from somewhere on pinterest but I changed it quite a bit... I just kept the chia seeds because I had never used them before and was interested in them.  They are a great protein source so this is SUPER FOOD ice cream!  Dairy Free, Gluten Free, and Vegan - can't really beat that !!
